Single Scorpio=V-Day Cake for Three Little Ladies
What do you get when a Scorpio is single on Valentine’s Day? A cake celebrating three little girls experiencing their first Valentine’s Day.
This special Valentine’s Day cake is a six inch cherry almond cake in eight layers with butter cream frosting. I have a recipe for a white cake that uses almond extract rather than vanilla to obtain a whiter white. I added dark cherries that I floured so as not to sink to the bottom of the pan. It’s a thick cake so I added sugar syrup to the layers before stacking. It is moist and delicious.
I also have gray macarons that I made with Italian meringue. These were the third attempt and I almost gave up on making them. The trick I believe, is to know when to stop folding and to let them sit and crust before baking them. The real test is how long you are able to be patient before putting them in the oven. They also need to cool completely before you remove them from the parchment paper.
I also have pink ganache drip which is a popular addition these days. Then I added cheesecake filled strawberries. Last year I attempted chocolate-covered strawberries and they broke down before I could enjoy them. This year, I witnessed the strawberries again breakdown with cheesecake filling but not as noticeable.
The process:
Eight layers stacked.
Crumb coat.
Top coat with some issues where the cake scraper made indents no matter how many times I tried to retouch it.
I decided to add some red in a bit of a watercolor effect.
And the final product…
